Recipe: Stuffed Plantains (how to be prepare )

Today’s recipe, colourful stuffed plantains, is a healthier break away from the usual fried plantain. The plantains in this recipe are baked first and then stuffed.

Stuffed plantains

Ingredients

  • 2 ripe plantains
  • 1 tbsp melted butter
  • 2 tbsps canola oil
  • Gizzard
  • 1/4 red bell pepper
  • 1/4 green bell pepper
  • 2 cloves garlic
  • 1/2 tsp ginger
  • 1/2 small onion
  • 1/2 scotch bonnet
  • 1 small tomato
  • 1 seasoning cube
  • Spring onions (for garnishing)
  • Parsley (for garnishing)

Instructions

  1. Peel plantain and make a slit down the middle. Brush with melted butter.
  2. Preheat the oven to 400F and bake plantain for 40 minutes.
  3. Dice all the vegetables (onions, peppers, tomatoes, garlic, ginger etc) and cut the gizzard into small bits.
  4. Heat two tablespoons of oil in a pan and lightly fry gizzard till half cooked, then add the veggies and cook until tender.
  5. Take plantain out of the oven once cooked and stuff with the gizzard.
  6. Garnish with parsley and spring onions. Serve immediately with a side of pepper sauce.

Ways To Transform Zobo Into A Cocktail


Zobo is a drink made using Zobo leaves. It is a nutritious drink that Nigerians know and love.
However, you may want to spice this lovely drink up some more, and add a little “sparkle” to it. And so here are three easy and awesome ways to make a zobo cocktail that bartenders will envy.

Create your bar or dining out experience in your own home with these cocktails that will make bartenders go green with envy.
First of all, we have the zobo martini.

Ingredients
  • Half cup unsweetened zobo drink
  • 1 or 2 shots vodka (depending on how strong you want it)
  • 1 tablespoon sugar syrup
  • 2 tablespoons of lemon juice
  • One lemon or lime
  • Sugar
How to make it
  1. Rim your glass. Get a cocktail glass. Cut a lime or lemon in half and rub it around the edge of the glass, making sure that the rim is coated with the juice.
  2. Pour sugar on a flat surface like a plate. Roll the edge of the glass around the sugar until it sticks to the rim. You may need to do this a few times.
  3. Put a few pieces of ice in a cocktail shaker. Pour the zobo, vodka, lemon juice and sugar syrup in the shaker, cover and shake vigorously.
  4. Pour out the liquid into your prepared cocktail glass. Add a slice of lemon to the cocktail glass.
  5. Enjoy your zobo martini with a bowl of nuts or chin chin like Dooney did.

Zobo Margarita

Ingredients
  • Half cup of unsweetened zoo drink
  • 1 or 2 shots tequila (depending on how strong you want it)
  • 1 tablespoon sugar syrup to sweeten (optional)
  • 2 tablespoons of lemon juice
  • One lemon or lime
  • Salt
How to make
  1. Rim your cocktail glass with salt (not sugar like we did above). To prevent it from being too salty, you can add a little-sweetened zobo with the salt.
  2. Place the glass in a freezer if you want to serve in five minutes, otherwise place in a fridge to chill.
  3. Put ice in a cocktail shaker. Add the zobo, syrup and tequila in the cocktail shaker. Shake vigorously for a couple of minutes.
  4. Pour into your chilled glass and serve immediately.

Ingredients
  • 3 tablespoons of Zobo Syrup
  • One cup of Orange Soda (Fanta)
  • 1 cup of 7up or Sprite
  • Two Tablespoons of Lemon Juice (optional)
  • 2 tablespoons of Angostura Bitters (substitute with Alomo bitters)
  • Ice Cubes
How to make
  1. Pour zobo syrup in a glass. Add the Fanta, lemon juice and 7up and mix properly.
  2. Stir in your Angostura bitters.
  3. Put in your ice-cubes and a slice of lemon or cucumber and serve cool.
